Pumpkin Muffins

At this time of the year, I get carried away with all of the pumpkin spice things that are in the store. So I decided to experiment and combine them into my own recipe. The pumpkin that I used was a different pumpkin. I bought it at Walmart and it said "pie pumpkin." I have always used solid pack before so I don't know if it would make a difference in the recipe.Actually they turned out pretty good. They had kind of a creamy taste and they weren't at all overpowering in spices~at least not to me.

Here is my recipe:


1 can pie pumpkin (not the big can that makes 2 pies)
2 eggs, beaten
¼ cup oil
1 box Jello Pumpkin Spice Pudding Mix
1 6 oz Yoplait Pumpkin Spice Yogurt
1/3 cup Pumpkin Spice Coffee Creamer
2 cups whole wheat flour
½ cup sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
½ tsp ginger
¼ tsp ground cloves

Mix pumpkin, eggs, yogurt and oil in large bowl. Combine all dry ingredients separately and then add to the pumpkin, egg and oil mixture. Spoon equal parts into muffin pans.

Bake for 35 min on 400.

6 large size muffins 

I used the pan that has the 6 muffin cups in it which makes them like those big muffins that you buy in the gas stations.
